The question we get asked most at every tasting — and what it actually tells us
Every time we pour Canon Chaigneau for someone new — at a tasting, a dinner, a trade event, there's a moment (usually just after the first sip) where the question comes. "What do you honestly think is best to eat with this?"
We used to answer it with the textbook response. Red meat. Lamb. Hard cheese. Something with structure to match the tannins. And those answers aren't wrong. But over time, the question started to interest us more than the answer.
Because what we've noticed is that people ask it apologetically. As if they've already ordered the wrong thing. As if there's a correct way to enjoy the bottle in their hand and they're worried they're about to get it wrong.
Wine is not a test. The glass doesn't know what's on your plate.
What pairing actually does
There is a real science to it. Tannins soften against protein, which is why a full-bodied red and a ribeye is such an enduring combination. Acidity cuts through fat and resets the palate. Sweetness in a sauce can amplify fruit in the wine. Getting this right does make both the food and the bottle better. We're not dismissing any of that.
But the flip side is also true. A wine with enough character (and Lalande-de-Pomerol has character) will find its footing at almost any table. The earthiness in Canon Chaigneau that works so well with lamb shoulder also, as it turns out, mirrors the wok hei in a plate of char kway teow. We stumbled into this pairing, and it was one of the better wine moments we've had in Singapore.
What the question tells us
The food pairing question is really a confidence question. It's people asking for permission to enjoy the wine the way they want to enjoy it. So here's that permission, plainly: drink Canon Chaigneau with whatever is already on your table. With cheese on a Tuesday if that's what Tuesday calls for. With hawker food if that's where you are. With nothing at all if you just want a glass.
